- 2 large Bone-in pork shoulders
- 3/4 cup brown sugar
- 1/4 cup kosher salt
- 2 tablespoons granulated garlic
- 2 tablespoons dried thyme
- 2 tablespoons ground cumin
- 1 tablespoon ground coriander
- 1 tablespoon granulated onion
- 1 tablespoon smoked paprika
- 1 teaspoon red pepper flakes
- 1 teaspoon dried chipotle powder
- 1 teaspoon dried sage
- vegetable oil
1. In a medium sized bowl, mix all ingredients together except for the oil.
2. Liberally run down the pork with oil and then the dry rub until completely coated. Move the pork to a large roasting pan. Cover pan with plastic wrap and then foil. Make sure that is it tightly sealed.
3. Move the pork to an oven and cook at 225 degrees F for 10 - 12 hours.
4. Use pork as desired.
