Fruit Salsa with Cinnamon Tortilla Chips

    Fresh Fruit Salsa

    10 minutes prep | 1-2 hours ready
     
    Makes 1 Quart
     
    • 1 cup fresh pineapple, diced small
    • 1 cup fresh mango, peeled and diced small
    • 1 cup fresh strawberries, diced small
    • 1/2 Jicama (approx. 1 cup), peeled and diced small
    • 1 Jalapeno pepper, seeded and minced
    • 1/2 red onion, finely diced
    • 2 limes, zested and juiced
    • 1 tablespoon olive oil
    • 2 tablespoon mint
    • Salt to Taste
    1. Toss together the mango, pineapple, strawberries, Jicama, Jalapeno and red onion in a medium bowl.
     
    2. Pour in the lime juice, zest and olive oil.
     
    3. Sprinkle with chopped mint leaves and season with salt to taste.
     
    4. Allow salsa's flavors to develop for at least 1 - 2 hours before serving.

    Cinnamon Sugar Tortilla Chips

    20 minutes
     
    Makes six servings
     
    • 1 pack of six inch flour tortillas (12 pack)
    • Non-stick cooking spray of choice
    • 2 tablespoons white sugar
    • 1 tablespoon ground cinnamon
    1.  Preheat oven to 350° F.
     
    2.  Using a very sharp knife, cut the tortillas into six equal pieces.
     
    3.  Line a baking sheet with parchment paper or a silicon-baking sheet.
     
    4.  Lightly spray the tray with the non-stick spray.
     
    5.  Arrange the cut tortillas on greased sheet.
     
    6.  Spray the tops of the tortillas lightly with the spray.
     
    7.  Sprinkle the tortillas with the sugar and cinnamon.
     
    8.  Bake the tortillas in the preheated oven for 12-15 minutes or until lightly browned and crisp.
