- 7 tomatoes cut into 1/4" dice
- 1 large onion, finely diced
- 1 bunch cilantro, finely chopped
- 2 jalapeno peppers, seeded and minced
- 2 large cloves garlic
- 2 teaspoons lemon juice
- 1/4 cup red wine vinegar
- 1/4 cup vegetable oil
- 1 tablespoon cumin
- 1/2 tablespoon coriander
- 1 teaspoon Kosher Salt (season to taste)
- 1 teaspoon Ground Black Pepper (season to taste)
1. Place all ingredients, except for salt and pepper, in a large bowl. Gently mix to combine.
2. Season to taste with salt and pepper.
3. Cover and refrigerate at least one hour before serving.
