Sword's Pico de Gallo

    • 7 tomatoes cut into 1/4" dice
    • 1 large onion, finely diced
    • 1 bunch cilantro, finely chopped
    • 2 jalapeno peppers, seeded and minced
    • 2 large cloves garlic
    • 2 teaspoons lemon juice
    • 1/4 cup red wine vinegar
    • 1/4 cup vegetable oil
    • 1 tablespoon cumin
    • 1/2 tablespoon coriander
    • 1 teaspoon Kosher Salt (season to taste)
    • 1 teaspoon Ground Black Pepper (season to taste)
     
     
    1. Place all ingredients, except for salt and pepper, in a large bowl.  Gently mix to combine.
     
    2. Season to taste with salt and pepper.
     
    3. Cover and refrigerate at least one hour before serving.
