Culinary Arts classroom (academic) includes sanitation (Ohio Law), safety, knowledge of equipment and supplies used in the field. The lab (hands on) is designed to familiarize the students with basic methods used in a professional kitchen. Topics include table service, knife skills, cooking methods, breads, pies, cakes, and all positions in a production kitchen. Students are expected to participate in the running and operation of the Sword & Shield Restaurant. Fee does no include knife set or uniforms.
